End Grain vs Edge Grain Cutting Boards
Think about wood grain like a handful of uncooked spaghetti. If you stack it vertically and cut through the ends they go around the knife and go right back where they were when you pull the knife back. But if you lay the spaghetti horizontally through the middle it chops in half and won’t ever go back the way it was.
End grain cutting boards also help to preserve the sharpness of your knives due to aligning the the direction of the wood fibers vertically, the same way the knife is cutting. So, knives cut between the wood fibers instead of against them. This allows the board to better self heal and naturally repel bacteria. With proper care these boards take much longer to show wear and tear.
Edge grain boards still last quite a long time but are more susceptible to wear as usage will cut through wood fibers and eventually break them down.
Care of cutting boards is simple. Wash with dish soap and warm water then towel dry. Do not let water sit on a cutting board for an extended period of time. Oil boards with mineral oil or your preferred cutting board oil every 4-6 weeks or if they start to look dry. Never put a wood cutting board in a dishwasher
